This one is a great one to prepare before bed, so it has time to cool in the fridge before brekkie.  Takes 5 mins to prep and 20-30 minutes in the oven.   Serve with some extra yoghurt or ricotta to spread or dip.

It’s got 3 sources of plants which your gut will love, whole grains, plus protein from the yoghurt, eggs and any nuts or seeds you might like to add.


1 large apple (or enough apple parts to make the equivalent of one large apple), roughly chopped

½ carrot, roughly chopped

3/4 cup rolled oats, plus ¼ cup extra

3 tbsp honey or maple syrup

1 tsp vanilla

1 tsp cinnamon

½ tsp baking soda

½ tsp baking powder

3 tbsp Greek yoghurt

2 eggs

1 tbsp butter or coconut oil


  1. Preheat oven to 180C and line a small baking pan with baking paper.
  2. Place apple, carrot, ¾ cup oats, honey, vanilla, cinnamon, baking soda and powder, yoghurt, eggs and butter in a blender.  Blend until smooth.  Stir through the additional ¼ cup oats.
  3. Pour mixture into prepared pan, bake for 20-30 minutes or until a skewer comes out clean.  Allow to cool before cutting into slices.

More plants:

  • Stir through crumbled walnuts, pecans, chopped almonds, pumpkin seeds.
  • Swap or add sweet potato, parsnip, pumpkin or zucchini to the mixture before blending.
