Stewed apples are a classic and simple dessert, and a great addition to lunchboxes. As they freeze well, you can always have portions on hand to add to yoghurt, top with oats for a quick and healthy crumble, or pop into a reusable squeeze pack. Flavoured with warming spices, stewed apples also double as a delicious natural remedy to help heal the gut and soothe both constipation and diarrhoea, or for sore mouths or throats. Try this recipe with pears or add in some rhubarb or quince when in season. You can use this recipe to replace the rhubarb in our Rhubarb Quinoa Slice.
Ingredients
1 kg apples, cored (peeled or unpeeled)
¼ cup water
1 tsp cinnamon
Pinch ground ginger
Pinch cardamom
Pinch nutmeg
Pinch salt
1 tsp coconut oil
Instructions
- Slice the apples and place in a saucepan over low heat, along with the water and spices.
- Cover and cook slowly until the apples are soft and collapsing.
- Remove from heat and stir through salt and coconut oil.
- Serve immediately or freeze in portions for later.
Add More Veg
- Include some chopped rhubarb, pear or quince whilst stewing.
- Stir through some frozen berries towards the end of cooking.
