I love this jam as an alternative to the traditional, store bought, sugar-laden variety.  The sugar comes from fruit (and a little honey or maple syrup if that’s your thing), and it is ‘set’ with the chia seeds that gel when they are mixed with the juice from the fruit.  The fruit and the chia seeds are a great source of fibre.  The chia is also rich in protein and is a plant-based source of omega 3 fats.  The raspberries are rich in vitamin C and K, manganese and have antioxidant and anti-inflammatory properties.
Use this jam to dip pancakes, spread of toast, drizzle over chia puddings or overnight oats.
Ingredients

1 cup raspberries (fresh or frozen)

1 tbsp chia seeds

1 tbsp water or juice (lemon, orange, apple, etc)

1-2 tsp honey or maple syrup (optional)

 

Instructions

  1. Place all the ingredients in a small saucepan and gently heat, stirring occasionally.
  2. Mash the fruit until you get a jam-like consistency.
