Sweet potatoes are a great source of complex carbohydrates and fibre. They’re rich in beta carotene (pro vitamin A) and pairing these circles with a source of healthy fat (think the tahini in a Simple Hummus, or
and vitamin C, as well as vitamins B3, B5 and B6 and potassium.
Team with a source of protein for a well-rounded snack, such as Super Quick Avocado Tuna Dip, or some black beans and guacamole.
Ingredients
1 sweet potato, peeled and sliced into 3mm thick rounds.
Extra virgin olive oil
Salt and pepper to taste
Instructions
- Heat oven to 180C. Place sweet potato circles on a baking tray, drizzle with olive oil, season with salt and pepper.
- Place in the oven for 30 minutes or until the sweet potato starts to brown at the edges.
- Top with your favourite topping or use with your favourite dip.
Add More Plants
- White potatoes, white or purple sweet potato, beetroot, turnips or carrots can also be used in place of, or as well as the orange sweet potato.
- Season the sweet potatoes with spices prior to roasting – paprika, cumin, coriander, cinnamon work well.
